I recently cracked a tail light on my 05 Cavalier. I looked on eBay for a cheap replacement and found one that I think has been salvaged. Anyways the seller claims that 03-05 tail lights aren't universally interchangeable, and I just wanted to check here because as far as I know, after the 03 face-lift there weren't any changes made to the car, am I wrong?

If your talking about the outters they are physically the same shape on all cavaliers. The look of the lens changed through the years. The inner trunk piece should be the same on all 03-05 cavaliers.
