I started running 93 octane and began adjusting my low octane table.
I made changes to the PE table, because Im guessing it uses PE under WOT? So this is the one I would want to change for drag racing.
I bumped up the values on the top end closer to the values that were on the high octane table, then went and logged. Not seeing any knock retard, is the idea to continue doing this until I see KR and then back the values back down?
Im guessing I should see a little more response from running the higher timing, Im still not quite sure how the computer uses the tables, Im guessing it dynamicalloy changes the timing using the high and low values included on the tables based on KR when it sees it? If so why would the computer not just using the high octane table if its not seeing and knock?

Thats exactly what it does, it interpolates between the two tables based on the amount of knock retard. It also uses some other tables to determine the final spark advance number. Just make sure you know what tables you are in when you are editing, for example, you aren't always in PE, and you aren't always in the main tables (unless you drive like an old woman).
You have the concept right, but just have to keep in mind that too much advance may also hurt power.

My guess is that you are only going to hurt power by advancing timing if you go over the values in the high octane table, it would be nice if some GM engineer or racing specialist could help clue us in. I guess its just a matter of trial and error and $$$ for dyno time until we start to build up a database of what works and what doesn't, eventually well have a better understanding of what works.

What I have done is copy my high octane into my low octane tables, and as I make changes to the high octane, I also copy those over. This is forcing the car to run on the high octane tables, and allows me to tune them, I am currently running 6-7 degrees of timing advance over stock high octane with no KR.

So you have Zero KR w/ low octane tables set to default high octane tables, Did you change your Main tables or Just PE tables or all of them?

Using both sets of tables, and running premium fuel.

Update :
I copied my High Octane tables to Low Octane and logged tonight, Found most KR was occuring at WOT w/ MAP around 90-98, in 4300 rpm range. KR was only about .1 - .4 I went to this area in the PE Low Octane table and lowered the values a little. A few more good sessions through the RPM range for the rest of the night, no more Knock Retard
I cant really tell by seat of the pants if it made a change, what I felt could have just been the cooler air in the evening. I think really I need a dyno now to see if there are additional power benefits from advancing timing past stock High Octane tables, and where they are in the maps. The race to tune the N/A Ecos is on

Yes, but when GM was testing the limits of the ECO, before they put the nitrous on it and blew it they were able to tweak 180 out of it.
I got 136 at the wheels with a hollow cat, catback exhaust and AEM cold air intake.

I thought it was 170, but regardless it's alot more than the stock tune provides.
