How did everyone reattach their armrests that they reupholstered on their 00+ cavys? I saw someone used rivets. Seems odd but could looks good I suppose...

I used
this stuff when I did my armrest. Its been at least 6 months and still has a good strong hold.
I used stainless Hex head bolts on the arm rests and a few other places in the interior. Worked nice as an accent with everything going on in the interior I had.
Not sure how it would look with a plainish interior
