I could be wrong, but with my 95 and 99 cavaliers, I had to shove a little screwdriver in the top to remove a little metal clip. I can't remember what side othe posts it is on, and its a pain in the ass to try and see. Everytime I have removed my headrests I have broken atleast one of the clips. Unless you are worried about the headrests falling out if you roll the car, I say just shove a screwdriver down into the seat and break the clips.

If you just pull them out, they will usually just go back in afterwards. What MAY happen, is the metal clips will get bent and block the round plastic thing that the bars slide through. If that happens just rip the metal clip out with pliers or bend it out of the way.
7 diff cars weve pulled rests on and every one was fine after wards and some were removed ,more then once
There is a proper way to do it...
My dad did it in my sisters cav to put seatcovers in it, and its an 02 cavi, so same setup...

I'm pretty sure the only reasonable methods have already been mentioned.
Take a small screwdriver, slide it down the side of the posts until you feel the metal clip. Push it away from the post and pull up to get that side free. Do that 4 times and you get both headrests out. Its a pain to do it without breaking the clips though, so much easier to shove the screwdriver in and twist till the clip breaks.
Or
Pull, and keep pulling. They will eventualy come out. I don't know if this breaks the clips or not, but apparently the headrests will go back no problem.
I can't imagine any other way to get them out, that doesn't involve ruining something. Unless there is a specific tool designed to unclip them, but that takes the fun out of it.
