OK Im looking at some 19x7.5 with a +48 offset, Im On Aim Front and rear(swapping to Easystreet in the front later)

The tricky part is Ill be flared In the front and rear 1" wider and 2" taller
The Fenders and 1/4 panels will be rolled and all plastics removed

Now I know a +48 offset is ALOT so Experts Will It work, Turning while down is rare now and can be inpossible thats fine. Just dont wana drop it and CRUNCH, or be rolling(thru a parking lot) and slice up the tires.

Also Its Available in an 18x7.5 +48 also which Im concidering much so because its a daily driver and tires are a BISH in 19.

also im looking at a 225 or 235 tire what would Fit, if it comes to it with the 19 I may HAVE to go with a 215?

The higher offset will bring the wheels further into your wheel wells so your issues will involve hitting the inside of the fender rather than slicing tires on the outside fender edge.

That offset is fine. If you end up with issues, you can always move them out a bit with longer lugs and spacers. If you get too low an offset, you're SOL when it comes to options.
