If I want to remove the original GM radio with theftlock and replace it with a different head unit are there any issues I need to deal with?
No, unless you want to re-use the factory one, or are using another radio that has Theftlock. If you are using an aftermarket head unit, you will be fine. BUT....what year is your car? 2000+ --read the stickies. Anything 1999 and older you will be fine.
