This is what is already in my 03 Cav:
Pioneer HU
JL Audio Amp 250
12-speaker Boston Acoustic system
Tons of LEDs inside and out
This is what I want to add:
Another JL Audio Amp 250
(2) 10-inch subs
more LEDs
My question is:
At what point will I need a new/upgraded alternator? I know the LEDs don't draw much, but how about the sound system?

The only things that draw current in your whole system are the amps, no matter how big/many speakers they're driving. You should be fine, your battery might need upgrading but the stock alt will do the trick.
