You wont want to use rca as your input to your monitors. The text is unreadable and graphics arent as good. You will want either a xenarc (my favorite) or lilliput monitor with a vga input. Surf on over to

Ok, your current electrical system is fine for a carputer. DO NOT use a house computer power supply, use a DC->DC supply so you don't need to go from 12V->110V->12V. If you can't find one, let me know.
As far as screens, if those are the only screens you plan on having, your computer will be virtualy unuseable except for MP3's and maybe movies. if it was me, I would go with a 10" or 12" datalux or EVO touch screen for the primary input. you can try to use one of the 7 or 8" touch screens but I find them small and too cramped unless you have a stylus or other pen device to use.

RCA works just fine for LCDs. The text isnt crystal clear but I can read it just fine, it looks more clear when your more then 2ft away also. If you just wana watch movies and such on the LCDs then RCA is fine, if you wana read alot on them I would say go another way.
