In a straight line it never happens but when I take a corner at low speed and hit the gas it spits and sputters. Even with a full tank. What the heck.

Check your oil.
The O/P switch opens when pressure drops below 6psi, well the switch being closed allows power to the fuel power, being open, no power to fuel pump, so a quick second loss of O/P would cause this, the reason it happens around turns is because all the oil sloshes to one side for a second

Sorry its taken me till april. I moved and had no internet.
I changed the oil and no difference. Today it's doing it worse than ever especially from a stop. If I stop then hit the gas, it spits and sputters then goes.
I am wondering. It has a new fuel filter and plugs. (well they have 3,000 miles on them). I have ran injector cleaner and dry gas thru the tank.
It is not kicking any codes. Even when it almost stalled today no codes.

I seafoamed it in the tank and in the vaccum line to the injection.. The car didn't smoke like sea foam said it would.
Anyways no difference.
I purchased new Bosch wires today for it and will get them on this weekend. 30 bucks for those.. didn't get the cheap ones this time, maybe it makes a difference.

Just a thought--may not be your problem.
I can vaguely remember a posting similar to yours, the fault turned out to be the injector harness being chaffed by the steering linkage somewhere under the car. It only happened when turning corners.
Routing correctly and repairing the wires fixed the problem.

Plug wires
Dont know how or why. 2 years ago I bought the car with 63,000 on it. I put in new plugs and new wires just to tune it up. At 85k I started to have the issue. New plugs, issue went away. Now with 88k, issue back. So I thought maybe moving the plug wires helped them not touch somewhere. Taking corners would move them a little (maybe just enough to arc something)
So I went and bought new bosch ultra premium. Problem solved. Starts easier, idles perfect now without missing a beat, runs perfect with no hesitation. I drove it all weekend and it did not do it once.
Now.. I am going to advanced autoparts and they are refunding me for the wires because they were under warranty.
Never buy Autolite Professionals.

Cobalts are not Js, they are Deltas completely different.
I would get some of the black wire loom stuff and put over your plug wires to help prevent them from rubbing threw.
^ I don't know anything about the new cobalts. I assumed they were the new cavalier and designated j-bod
I put the wire loom stuff back on them when installing.
