Since I'm going to change the headgasket, a few people over on another site I frequent suggest going ahead and getting the head machined, and the vales ground and seals changed while I have it off. How much would I be looking at to get the head machined and the valves ground, from a machine shop?
I agree about the HG, when changing the HG it is wise to take it to the machine shop to have the deck completely cleaned off or even shaved especially if the HG was baked on to begin with. That way for your new HG it will have a clean surface.

So looks like I'm going to get the head gasket, new head bolts, and going to take it to a shop to get a price on shaving the head.
most shops charge $75 for a decking and bead blasting. could be up to $100 more for just the valve job though...
