Does someone know what is the max speed attainable with a stock Sunfire GT 2001, that would have no limiter?

I personally don't know why you would ever take the limiter off... its there for a reason... and unless your hitting it in the 1/4 mile there is no reason you should need to go over 108mph or what ever the governed limit is.
i think 140ish drag limited cus the ss cobolt is 14x drag limited
