Heating Problem

Alrite well my car doesn't hit worth crap and i was just wondering what all could be wrong with it. Basically, when I go out in the mornings to warm up my car and leave about 10 mins later and the temp gauge just barely is passed the "C". then i drive through town (25-45mph) and it heats up to where the needle is almost dead top but once I get outta town and go 55mph or fast it drops to the "C" again. last year i had the reverse problem where my car was overheating and i had the fan relay switch and the thermostat replaced (and later the head gasket ). so what all could possible be the problem? i've been told the thermostat and my bro even said something called a thermistor (which i've never heard of before). any help is appreciated. thanks in advance.

Okay lets see here.

Alright letting the car idle for 10 minutes than going and the temp gauge hasnt moved, no surprise there.

Car heats up when driving around town but cools back to when on the highway. Hmmm.

Okay do you have heat when driving around town, do you have heat when on the highway?
Let me know the results.

A thermoister is simply what the ECT actually is. It measures tempature of the engine coolant.
