We put in a new fuel filter, and we started smelling gas in the engine.
I was told that a new filter can cause more fuel pressure in the injectors, and blow an o-ring.
How do I go about figuring out if that is the case?

I've never heard of a new fuel filter blowing an injector ring before...
My number one guess would be that the connection at the fuel filter is leaking and inst tight enough.
Although to check your injectors and lines, just start the car and grab a really bright flash light. Check your fuel lines and rail. Especially at the fittings. Make sure your FPR isnt leaking, and look really close at each injector both at the head and the fuel rail and make sure gas isnt spraying out. I blew an injector ring once on my car and it was obvious, I ended up just replacing them all. I had the fuel rail off not long before that and the ring cracked. otherwise they "usually" dont go out.
No the gas smell is coming from the engine area, and it didnt start until the same day we changed the filter. My filter is way in the back of the car, near the trunk area.

Either way, check everything like i said. But I doubt its the filters fault, probably just a coincidence.
I agree with Weebel the filter change had nothing to do with the gas smell in the engine compartment.
