Low Engine Temp

I have a 01, ohv. I Just had a bad water pump issue, so i replaced that and a thermostat and water pump with parts from auto zone. everything appears fine it will heat up to about 195, or a little lower. But once i start driving it drops to about 100 and just a tad under and stays there... Are there any issue that can come from that and why the hell does it keep doing that, most of my ride its stays WELL under 195... Any ideas?

Coolant Temperature Sensor... Time for a change...
Or at very least check the connections / wires...
