Cooling system

I had to change out the water pump on my 98 z24 with 113000 miles so I replaced the timing chain, tensioner and shoe. Well I'm not leaking oil or coolant which is a good thing. I have replaced the coolant in the radiator with dexcool and water 50/50 mix. I also replaced my coolant temp sensor. Now I'm having the problem that the temp hand will go to the mark between 100 and 195 and 195 it's self. So probably some where around 150 or so I would guess. So my first thought was the thermostat. Well yesterday I purchased everything needed to replace it and when I got home I popped the hood and opened the reservoir and air escaped out sounding like an air hose. I put the cap back on (which is a new 15psi cap) and cranked the car again and now the temp hand is working fine. Drove it for an hour working perfect. Well this morning I drove it to work and again some where around 150. I get to work and open the cap again and a little air escapes. Crank the car and the temp have returns pretty close to the normal position. What would cause all this air in the system? Also for the car not to over heat with air in the system seems weird. And as I said before I'm not leaking coolant anywhere. Anyone had this to happen before. I don't want to replace the thermostat and it not be the problem since it did start working. Any help on this will be appreciated.

Have you bled the coolant system? it sounds like air bubbles are finding there way into the reservoir.

Well that's it. I poured the coolant and water into the reservior and cranked the car with the cap off until reaching operating temp and then reinstalled the cap. I have drained the system before but don't remember it being this hard. Is there a better way for me to do it?

Yes there is there should be a cap on your heater core line you uncap that to let out excess air.

Well my coolant system is working fine now. Thanks for all the help.
