Weird ECOTEC stalling

Alrighty, this is a problem that happened only once on my 03' cavy. I was crusin down the road @ about 45mph, 5th gear proboly around 1600-1700rpms( i was behind a big rig and couldnt pass). When i finally got to my destination my car stalled as i pushed in the clutch to turn into the parking lot. I restarted the car and pulled in and it stalled again. So i restarted it again and reved it a few times and went in and did my busness. When i started the car to come home, i reved its somemore and drove off. i kept the rpms above 2000 for the whole trip and ran it up to 5500 rpm a bunch of times. My mind is thinkin sence the ECOtecs in our cars make max hp at 5500-5600 rpm, that it wasnt used to running that low of rpms and $hit got "gummed up" and running it at higher rpms cleaned it out. I could be wrong, i dunno. Any input to why this happened would be helpful. I'm not worried about my car, its just something thats on my mind and is buggin me. Thanks guys

only problem I have when am driving below 2000RPM is that once i LET OFF the gas, it jerks 2-3 times as it was stalling. Sometimes more than I would think it should. It's a little weird and it didn't use do it when I first got the car, at least it wasn't as noticeable.

Mine does the same thing with the slight bucking when i let off the gas below 2k rpm. I thought maybe it was the fuel filter but since have changed all filters, spark plugs, oil, trans oil, etc. It only does it in lower gears which makes sense but is this normal? is it supposed to be this way? could it be a tuning problem based on rpm and throttle position? i would understand obviously if it was like below 1000 rpm but ya its even up around 2000-2500 rpm that it happens.
