So upon searching I found the reason for the sudden failure of my 95 Sunfires 2.2 Head gasket so soon after being replaced. I searched and found quite a detailed write up of how to correct this issue, but still have just a couple questions.
What gasket does everyone use? That is if there is more than 1 option. I am looking at a Felpro set HS9469PT-2 along with Felpro ES72172 head bolt set.
What else should I do when I replace the gaskets? I am thinking plugs and wires, am I missing anything?

The Felpro hd gasket kit is a pretty good kit, Even with th e head bolt kit, Sure plugs and wires would be a good idea, Also when taking apart the cyl hd, Just make sure youre cyl hd and engine block, Mating surfaces need to be cleaned pretty good, Cause common problem for leaks, Also make sure you torque the cyl hd bolts in proper sequence's, So that the hd gasket is evenly sealed, Also I think you should have things pretty well covered.

as a heads up... the bolts are one time use... once you torque em they are done... so make sure you have the head on right before torqueing em...
i'd also suggest taking the head to a machine shop before re-installation... so that it mates up better... and while you're at it you can get it port and polished and gasket matched (exhaust and intake)
