First off, 2004 Ecotec, Automatic tranny.

Ok, now for what the car is doing. There are times where it idles really weird, starting at about 1000 RPM, then itll jump to about 1300, then back to 1000, and repeat. Then it will stop and won't do it again for awhile.

Next, this is the weird thing: It will just stall out. Out of nowhere, sitting at a red light car shuts off.

Thows a random CEL every so often.

Only mods are a 75 shot of n20, wet and the B & M shift improver, upgraded the spark plugs and only run premium fuel.

Any idea of what my problem could be? Brother thinks we might have put the n20 jet too close to the IAT sensor and froze it, but I dont know.

I know that some of the Ecotec J-bodies had idle problems that were covered by a TSB, and it was necessary to do a PCM reflash. Perhaps yours is in need of this??? Contact a dealer and see what they have to say.

Ummm... have you bothered to even check what the engine code is? Cars don't throw random codes, but they can throw specific codes intermittently
