Yeah, but you're missing out on a lot of extra power by going 4-ohm instead of 2-ohm.
Also, I did a good bit of Googling on how to setup the amp, and got all confused by gain, lowpass filter, and bass eq. Those are the adjustments possible with this amp. I found precisely zilch info on how to setup this particular amp. Right now I have gain turned up a good bit, the eq turned up, and the lowpass set at 200hz. Does that sound right? Thanks.
For a sub I would bring the the crossover down to 60-80Hz

Keep in mind, if you want to use Bass EQ, set the gain while playing a sine wave the same as the center frequency. (With Alpine I think it's 45Hz, check the manual)

How would I wire up 1 single voice coil sub (the above mentioned Infinity) to put a 2 ohm load on the amp?

I didn't find anything in the manual that mentions "center frequency" but I DID find something that said Bass EQ...........50Hz, +12dB Variable. Is 50Hz the center frequency then? And thanks for the responses.
And as an edit to my above post, I got the infinity sub on sale at CC for 70 bucks last february, I needed something to replace my ages old Planet Audio sub that had seized the voice coil. I am considering getting an ED 11Kv.2 sub to replace the infinity though sometime this summer, after I upgrade my 6x9's.
No problem. You said your sub is a single voice coil, so unfortunately, you CAN'T wire it in two ohm. One option you have is to grab another of those subs and wire both of them in parallel, then you would get 2ohms.
From the look of it, yeah 50Hz should be the center frequency. You could confirm it by playing a bunch of sound files, 30Hz, 40Hz, 45Hz, 50Hz, 55Hz, 60Hz, etc with the volt meter attached to the output leads. The one that reads the highest voltage (after bass EQ is ON) is the one you want to tune on.
11kv.2 are supposed to be beautiful subs. I've been trying to convince myself to buy 2 of them forever

From what I've observed with Alpine amps and how they rate them, it's probably something around 1000-1200 thumping watts.
