How hard is it to replace the stock struts/springs with the tokico d-specs? I have heard they are the easiest for installing. Anyone know where I can find a "how to?"

I am replacing all 4 struts and the springs with the DSK501 kit from shox.com (D-spec struts + springs). The link wont work if I paste it, have to manually to a look up according to brand and car. So if I am replacing struts AND springs, I wont have to take the stock ones apart, to re-use any of the old parts?

If the springs come installed on the strut you just swap them out. In the front there are 3 bolts under the hood and two bolts behind the brake rotor. For the rears there is one nut in the trunk, and 2 on the underside of the mount in the wheel well. There is one bolt at the bottom.
If you have to assemble them, you'll need a spring compressor and some assorted sockets. Also get yourself a socket that specially made so you can torque the strut mounting nut correctly. I basically did the same thing this weekend and had never done it before. Wasn't too bad. It helps to have some kind of vice to hold the struts so you can work on them.

What kind of socket is this?

Here's little how to on removing the struts off of the car and tearing down an assembled strut/ spring combo.
That should help you with removal and installation with your new setup.
Good luck with it.

Done.
1 more question,
Is it even possible for the springs to come mounted? I mean, don't they go into the stock mounts?

i'd say contact a+ or TTR. either one of them can get you that kit for less than $850. then you'd also be supporting vendors that support the community.
